ANZAC biscuits are a delicious classic Australian treat made with oats, butter and a touch of golden syrup.
For many households they are a baking tradition at this time of the year. Everyone as their own take on this classic biscuit – this is ours. Easy to make, simply irresistible and great for sharing!
With very little mixing they are easy on the hands and great to get the kids involved.
Ingredients
- 1 cup rolled oats (not instant oats)
- 1/2 cup flour
- 1/2 cup desiccated coconut
- 1/2 cup brown sugar
- 70g butter
- 2 tablespoons golden syrup
- 1 teaspoon bicarbonate of soda (bicarb soda)
- 1 tablespoon boiling water
- 1 teaspoon butter for greasing
Method
Pre heat your oven to 180°C (160°C fan forced)
- Grease 2 large oven trays and line with baking paper
- Combine the oats, flour, coconut and sugar in a large mixing bowl.
- Place the butter and golden syrup in a saucepan and slowly melt over a low heat until smooth.
- Add the bicarb soda and boiling water to the melted butter. The bicarb soda will bubble and foam up.
- Pour the melted butter mix into the bowl of dry ingredients. Mix together.
- Place teaspoons of the biscuit mixture on the lined trays (about 5cm apart) and flatten a little.
- Bake in over for 10-12 minutes until golden (chewy), or a bit longer if you prefer a crispy biscuit.
- Cool biscuits slightly on the trays before moving onto a wire rack as they will firm up as they cool down.
Tips
- Spray your measuring spoon with a little cooking spray (or run under hot water) before measuring the golden syrup to prevent it from sticking to the spoon.
- The biscuit mixture will spread during cooking so don’t place the blobs too close together on the trays.
- The mixture can either be placed onto the baking trays with a teaspoon or rolled into small balls – whatever you find easier.
- Biscuits can be stored in an airtight container for a week.
